A great non-stick alternative

I love my carbon steel wok so was very excited to try out their skillet. I used it all week on my gas stove to cook what I would normally cook in my treated pans: veggies, eggs, fried rice, meat and fish steaks and the big acid test -- papas rosti. It performed as well or better than my non-stick pans, and I didn't have to worry about any chemical residue leaking through scratches. It heats up just as beautifully and evenly as the wok does and retains heat just as well too. I would highly recommend it. (I chose the 10 inch skillet because carbon steel is heavy.)

Natural nonstick times ten!!!

I'm so glad this is the pan I chose over the endless others offered on Amazon. I got it yesterday and washed it good today then went to seasoning it up. This is so much easier than my iron woks to season up. After putting in on the fire to dry I used a paper towel with some olive oil and coated all over the inside using a tong for safety. After about 5 minutes all the smoke stops, so I then repeated that 7 times. I just cooked a stewed chicken dish on it and it was more "nonstick" than a real nonstick pan! Even cleaning the pan after was a breeze. I used the soft nonabrasive yellow side of my dish sponge to simply wipe the residue off with some water and it slid off like water on a duck's back. Even my well seasoned iron woks aren't nonstick like this. However the company made this they did a really good job!!
UPDATE: months later and this pan is still going good. One of my kids have been mistreating it and some of my original coating I cooked into it is gone but it's still working pretty good! I just slightly oil the pan as it's heating up and it's good to go with a pretty good nonstick surface. It worked like a beauty before my kid abused it so when I get time I'll redo the oil coat. This pan is also very easy to clean up still.

Great pan, great value

Use this pan properly, and you will find no flaws with this exceptional value. Any complaint present in any review basically comes down to a misunderstanding of what they have purchased.

- If you are comfortable using and maintaining cast iron, you'll have zero problems with this pan.
- If you like cooking with stainless steel, you'll have zero problems with this pan.
- If you understand the concept of seasoning new un-coated cookware, again zero problems for you.
- If you have used higher priced carbon steel before, like De Buyer, Matfer, etc. you'll love this pan.
- If you have ever cooked in a professional capacity, you'll love this pan. And you won't complain about not being able to go straight from the burner to the oven, because you clearly saw the wooden handle in the picture. Even if you torch the handle over an open flame, a spare comes in the box.

However, if you expect this pan to be as light as the $11 aluminum non-stick at the local supermarket, you'll be disappointed. It's a quality pan made with heavy gauge carbon steel. It's not going to feel like an aluminum pan. If you have never used anything but coated non-stick cookware before, you should expect there to be a bit of a learning curve. Once you figure it out, this will be your favorite pan.

Season this thing properly and cook anything you want in it. Maintain it properly and you'll never need to replace it.
