Beef with Vegetables in Oyster Sauce

Ingredients

  • Beef tenderloin
  • Bell pepper
  • Green sweet chili pepper
  • Garlic
  • Ginger
  • Green onions
  • Salt, pepper, sugar to taste
  • Oyster Sauce
  • Soy sauce
  • Sriracha Sauce to taste
  • Chinese cooking wine (or dry white wine)

Instructions

1.Cut the beef into the equal bite-sized chunks. Add salt, pepper and a little sugar to taste

2.Add the oyster sauce and let it marinate for a few minutes

3.Dry all vegetables well before cutting. Cut pepper into similar size chunks

4.Finely chop the ginger and garlic

5.Heat the wok up well before adding cooking oil. The wok is hot enough when it starts to smoke

6.Pour the oil down the sides, so it flows to the center and then swirl it around the wok

7.Stir-fry the ingredients in order by longest cooking time, so start with the beef and stir-fry for about 4 minutes, then spread it evenly around the bottom of the pan

8.Let it cook for 10-15 seconds, flip it over and cook it for another 10-15 seconds. Add more oil if necessary

9.Remove the beef aside

10.Wipe the inside of the wok clean with a paper towel. Add more oil and stir-fry the pepper for about 2 minutes, then add the garlic and ginger and stir-fry them together for another 3 minutes.

11.Add the cooked beef

12.Add wine, and soy sauce and stir-fry everything together for another 2 minutes
